My considerations incorporated the following elements:
- Urban waste free marketplace selling fruit, veg and vegan produce
- Loose products and produce with the ability to refill and reuse
- Cafes and food stalls serving fresh, organic, vegan menus.
- Community educational kitchen delivering training and demonstrating on healthy cooking
- Flexible Space to accommodate community events and public gathering spaces.
- Grow your own allotment (Exploring the use of vertical hydroponics)
EDINBURGH RAILWAY ARCHES
The rise of global population and consumerism have put unsustainable pressures on our resources and nowhere has this been more evident than the effects of mass meat and dairy production on our health, animal welfare and environment.
As a vegan and environmentally conscious individual,
I am interested in designing spaces that encourage development in inclusive, sustainable living and help people and our environment flourish. I want to explore the rationale for my current beliefs and life choices and the feasibility of introducing an urban market place that could be a catalyst in delivering an alternative way of shopping, eating and living for people living in cities who recognise and share the desire to live a greener life but are currently not accommodated for my city planner and retailers.
My aim was to design an urban marketplace that would promote environmental, veganism and healthy cooking and eating - challenging consumer habits, creating a more personal shopping experience whilst providing advice on nutrition and sustainability.

FLEXI SPACE
Flexi Space that will accommodate public talks and gatherings, when not in use it transforms into a cafe and seating area.

COMMUNITY EDUCATIONAL KITCHEN
Second floor holds private cooking classes. Community educational kitchen delivering training and demonstrations on healthy cooking.

WASTE FREE MARKET
Zero Waste Market that will enable people to use their own bags for the bulk food decanters. This Market will stock produce from the vertical farming growing in the back of the arches. I will be using the aeroponic system that will grow veg for the market. It will be on a rotating panel to allow staff to collect produce from the ground floor.
